Cranberry and White Chocolate Oat Slice

With a surplus of rolled oats and eggs I made double this recipe (in two separate batches) and cooked it in the roasting dish!


250g Butter (melted)

1 Cup Brown Sugar

3 Eggs

2 Teaspoons Vanilla Essence

1 Cup Flour

3 Cups Rolled Oats

¾ Cup Cranberries

¾ Cup White Chocolate Drops


Whisk together melted butter and sugar. Whisk in eggs and vanilla.

Mix in flour, then add Oats.

Lastly add Cranberries and Chocolate and mix throughly.


Back for about 25 minutes at 180⁰C


Turn out onto cooling rack and cut into squares (or rectangles or triangles if that's what floats ya boat 😃) when cool.
