Gingerbread Slice

To me ginger is the taste of Christmas! This slice has the perfect combination of ginger and sweetness.


I made the cream cheese from scratch using 4 Cups of raw milk and 2 ½ Tablespoons of lemon juice.


Cake

1 cup butter (softened)

1 cup sugar

1 cup brown sugar

2 eggs

2 tsp vanila

1/2 cup molasses

1 tsp cinnamon

1/4 tsp cloves

1 tsp ginger

4 cups flour

2 tsp baking soda


Frosting

120g cream cheese (I used what I got from the homemade cream cheese recipe above)

1/4 cup butter (softened)

1 cup icing sugar

1 tsp vanilla


Preheat oven to 160 degrees C (325 F)

Grease or line a sponge roll tin

In a large bowl, cream butter and sugars till light and fluffy. Mix in eggs, vanilla and molasses. Beat for 1 to 2 minutes.

Stir in remaining ingredients and mix till combined.

press into prepared tin/pan and bake for 20-22 minutes.

Cool completely


Ice with cream cheese frosting and enjoy!
